Lately, I have been doing a lot traveling and I haven’t had much time to get creative in the kitchen or preparing my meals, which I miss doing.

Typically, my husband does the main cooking, lucky me! I prefer the sweeter side, desserts. But every so often, I like to surprise him (and myself) by getting creative in the kitchen. I like recipes that are in my wheelhouse, fun, quick and easy.

So when I came across this recipe for Chicken Zucchini Noodle Caprese. I had to try it and it did not disappoint! In fact, it was so good, I made it twice in one week!

I had fun preparing the zucchini with my new Spiralizer gadget, I felt like a kid again playing with a play-doh maker!

In my opinion, and The Skinnytaste Cookbook: Light on Calories, Big on Flavor, are great for all things food.

The recipes and directions are easy to follow and come with pictures, which I refer to numerous times while cooking (visual learner). Sorry, my picture doesn’t even compare. All the recipes include nutritional facts which make it great for tracking and importing recipes to your apps. 

So if you are new in the kitchen or are like me and prefer something simple and easy, I recommend giving this one a try!

Personal Preference Notes: 
I follow a Flexible Diet and prefer to make my meals with as much  “volume” as possible. 
I add extra chicken, reduced the amount of olive oil by half (or omit) and use Fat-Free Mozzarella.
